
Beef Rollatini With Tomatoes

Ingredients
- Extra virgin olive oil
- 1 lb beef flank steak – cut into thin strips
- ½ lb mortadella – cut into 1” cubes
- 1 small onion – chopped
- 1 x 14 oz can crushed tomatoes
- Coarse sea salt
- Cracked black pepper
Instructions
- Preheat oven to 400 F
- Lay a slice of the flank steak on a flat surface and season with the salt and pepper
- Place a cube of mortadella on top of the steak
- Roll the meat up and secure it with a toothpick and place in the refrigerator
- Continue with the remaining meat and mortadella
- In a large saucepan heat 2 tablespoons Olive Oil over a low heat
- Add the onion and cook until soft, about 8 minutes
- Turn up the heat and add the meat to the pan.
- Brown on both sides
- Add the crushed tomatoes and season with the salt and pepper
- Bring the mixture up to a simmer, then place in the oven and cook for 10 minutes
- Serve on a large platter
