
Black Bean Bites

Ingredients
- Extra virgin olive oil
- 1 small onion, finely sliced
- 1 can of black beans
- Fresh oregano, chopped
- 1 tablespoon of cream cheese
- 1 box filo pastry sheets
- Breadcrumbs
Instructions
- Preheat oven to 375ºF
- Heat the Olive Oil in a shallow pan, turn down to a medium heat
- Add the sliced onion, stir until soft and golden brown
- Drain and rinse the black beans and heat with the onions, stirring constantly
- Mash the bean mix to a rough paste, adding the sour cream and a few drops of Olive Oil so that it is spreadable
- Season with salt, pepper and oregano
- TO ASSEMBLE: It’s important to work quickly so the pastry sheets do not dry out
- On a clean surface, lay out one sheet of filo pastry
- Lightly brush with Olive Oil and sprinkle with breadcrumbs
- Place another sheet on top and repeat with the Olive Oil and breadcrumbs
- Continue layering in this way until you have 6 sheets layered
- Spread half of the black bean mixture over the surface
- Continue the pastry layering process again until you have another 6 sheets
- Spread the remaining black bean mixture over the surface
- Tightly roll lengthways, to create an inner swirl effect
- Place on a lightly oiled baking sheet and bake for 15-20 minutes until crisp and golden
- Leave to cool before slicing into thin, bite-sized pieces
