
Chili Pepper Pineapple And Mint Marinade

Ingredients
- 1 cup extra virgin olive oil
- ½ cup balsamic vinegar
- 2 large red onions, peeled and thinly sliced
- 1 tablespoon brown sugar
Instructions
- Place the peeled and chopped pineapple chunks in the blender
- Add the apple cider vinegar, chili flakes and mint leaves
- Pulse on a high speed 4 times. It should be lumpy
- Pour into a mixing bowl and slowly whisk in the Olive Oil.
- Add salt and pepper
- Cover the chicken breasts with the marinade and leave to marinade for 8 hours or refrigerate overnight
- Before grilling the chicken, wipe away the excess marinade and discard
- Grill the chicken or fish for best results
