
Creamy Parmesan Tilapia

Ingredients
- Extra virgin olive oil
- 4 tilapia fillets
- 3 tablespoons cream cheese
- ½ cup fresh parmesan cheese – grated
- 2 lemons – juiced
- 3 cloves of garlic – finely chopped
- Aluminum foil
Instructions
- Preheat oven to 375ºF
- Roll out a large piece of the foil on a flat baking sheet
- Evenly spread 2 tablespoons of Olive Oil on the foil
- Place the tilapia fillets side by side over the olive oil
- In a small bowl, whisk together the cream cheese, parmesan cheese, chopped garlic and the juice of the lemons. Season with salt and pepper Spread the cheese mixture evenly over the fish
- Fold the foil edges together to form a closed pocket
- Place the baking sheet in the oven Bake for 15 -20 minutes
- Carefully open the foil pocket, using a flat spatula lift the fish onto plates and spoon over the creamy parmesan sauce
