
Extra Olive Slaw

Ingredients
- 1 cup extra virgin olive oil
- 6 oz kalamata black olives – pitted and halved
- 6 oz green olives – pitted and halved
- 1 small red cabbage – shredded
- 1 small cucumber – cut into 3” strips
- 1 bunch of green scallions - chopped
- Fresh basil – rough chopped
- 2 tablespoons red wine vinegar
Instructions
- Bring to a boil a large pot of water. When boiling, add the shredded small red cabbage and boil for 10 seconds and drain
- In a large bowl, mix together the warm red cabbage, chopped scallions, green and black olives
- Add the Olive Oil, red wine vinegar, salt and pepper and toss together until thoroughly mixed Cut the cucumber lengthways into 3 inch sticks Gently mix in with the slaw
