
Grilled Chinese Salmon Salad
Ingredients
- 2 large salmon fillet breasts
- 1 Tbsp soya sauce
- Juice of 1 orange
- 1⁄2 tsp fresh ginger, grated
- 2 spring onions, chopped
- 1 tsp honey
- Mixed salad greens
- 1 large carrot, grated
- 2 oz toasted cashew nuts
- FOR THE DRESSING:
- 4 Tbsp Extra Virgin Olive Oil
- 1 lime, juiced
- 1 tsp honey
- 1 Tbsp fresh coriander, minced
- Sea salt and cracked black pepper
Instructions
- Prepare the marinade by mixing the soya sauce, orange, fresh ginger, honey and spring onions together. Pour over the salmon and leave to marinate for 30 minutes.
- Preheat grill.
- Place the salmon on the hot grill and cook for about 4-5 minutes per side. Set aside to rest.
- Whisk together vinaigrette ingredients in a small mixing bowl. Set aside.
- Place the cabbage, carrot and cashew nuts in a salad bowl, place the cooked salmon on top.
- Drizzle with the vinaigrette. To serve, divide onto 4 plates.
