
Hearty Lemon Chicken Stew

Ingredients
- Extra virgin olive oil
- 4 skinless and boneless chicken breasts, diced
- 4 cloves garlic, peeled and chopped
- 2 onions, chopped
- 4 carrots, chopped
- 2 sticks celery, chopped
- 2 leeks, washed and chopped
- 2 large potatoes, washed and diced
- 2 lemons, zest of 1 and juice of 2 lemons
- 1 can chopped tomatoes
- 1 cup of red wine
- 1 tablespoon tomato purée
- 2 cups of chicken stock
- 1 tablespoon chopped fresh thyme leaves
- 1 cup of cooked lentils
- Salt and pepper to taste
Instructions
- In a large saucepan, heat 4 tablespoons of Olive Oil
- Sauté the chicken pieces until they are golden brown
- Add the garlic, onions, carrots, celery, leeks and potatoes, add a little of the chicken stock, lemon zest, and sweat the vegetables for 15 minutes with the lid on the pan
- Stir in the remaining ingredients, replace the lid and simmer for 40 minutes until the vegetables are soft
- Divide into warmed bowls and finish with a swirl of Olive Oil and crusty bread
