
Honey Chili Turkey Meatballs

Ingredients
- 3 tablespoons extra virgin olive oil
- 1 pound ground turkey
- 1 red onion, chopped
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- 1 tablespoon honey
- 2 teaspoons apple cider vinegar
- Salt to taste
Instructions
- Preheat oven to 375ºF
- In a large bowl, mix together the ground turkey, chopped onion, chili powder, paprika and black pepper. Season with salt
- Leave to rest in refrigerator for 30 minutes to firm up
- Take out of refrigerator and roll meatballs into 26 bite-size meatballs
- In a large ovenproof skillet, put 2 tablespoons of Olive Oil on a medium heat
- Place the meatballs in the hot pan. Turn the meatballs until they are brown all over, about 3 minutes
- Transfer the skillet into the oven and cook for 5 minutes
- Meanwhile whisk together the honey, apple cider vinegar and 1 tablespoon of the Olive Oil
- Remove the meatballs from the oven and pour the honey glaze mixture over the meatballs.
- Swirl around to cover all meatballs
- Put back in the oven for 2-3 minutes, until the glaze has reduced and the meatballs are coated and shiny
- Serve with a toothpick in each meatball for an easy bite-size snack
