
Jumbo Pasta Shells Stuffed With Shrimp And Artichoke

Ingredients
- Extra virgin olive oil
- 16 shrimp, peeled and de-veined
- 1 onion chopped
- 6 oz artichoke hearts, marinated and quartered
- 1 cup ricotta cheese
- 1 cup mascarpone cheese
- 1 ½ cup parmesan cheese, grated
- 4 tablespoon fresh parsley, chopped
- ½ box of cooked jumbo pasta shells
- 1 jar of red marinara sauce
Instructions
- Preheat oven to 400ºF
- Using a large non-stick skillet, heat 2 tablespoons of the Olive Oil, on medium heat
- Add the chopped onion and cook until soft
- Add the raw shrimp and artichoke quarters
- Cook for 3 minutes
- In a medium bowl, mix together the ricotta, mascarpone and 1 cup of parmesan cheese
- Season with salt and pepper
- Add the shrimp mix into the cheese mixture
- Stuff the cooked shells
- Lightly oil a baking dish with Olive Oil
- Add half the marinara sauce on the base of the dish
- Line up the stuffed shells evenly in the dish
- Pour over the remaining sauce and sprinkle with the remaining parmesan cheese
- Bake in the oven for 25 minutes
