A wonderful family dish with a middle Eastern twist! Serve with couscous and a tomato and olive salad.

Lamb kofta with yogurt and cucumber sauce

Ingredients
- 500g/ 1 Ib 2 oz minced lamb
- 1 red onion
- ½ tsp cinnamon
- 1 tsp ground cumin
- 1 tsp ground paprika
- Salt and pepper
- 50g/2 oz pistachio nuts
- 1 tablespoon Extra Virgin Olive oil
- 1 tablespoon fresh parsley
- 2 eggs
- Extra virgin olive oil for cooking

- For the yogurt and cucumber sauce
- 1/2 cucumber
- Salt and pepper
- 1 tablespoon Extra Virgin olive oil
- 1 tablespoon fresh mint
- 200 ml/ 8 oz Greek yogurt
- Salt and pepper
Instructions
- Preheat the oven to 250 F/120 C. Finely chop the red onion and crush the pistachio nuts in small pieces. Beat the eggs together in a small bowl. Finely chop the fresh parsley. Place all the ingredients in a large bowl and mix together thoroughly with a large spoon.
- Form the mixture into 12 flat mini burger shapes. Preheat a large frying pan over a medium heat. Add a drizzle of extra virgin olive oil and pan fry the patties, for 3-5 minutes on each side. Transfer to an ovenproof dish and keep the patties warm in the oven while frying the remaining ones.
- Wash the cucumber (You can keep the skin on). Finely chop the cucumber and place in a bowl. Finely chop the fresh mint and add to the bowl together with the extra virgin olive oil and the Greek yogurt. Mix together and season to taste. Serve with the lamb koftas.
