
One Pot Chicken Basil Pasta

Ingredients
- Extra virgin olive oil
- 1 cup of chicken stock
- 2 servings of uncooked mini pasta shapes
- 1 can of crushed tomatoes
- 2 diced skinless chicken breasts
- 1 bunch of fresh basil – roughly chopped
- 1 small red onion – chopped
- 1 tablespoon parmesan cheese, grated
- Frying pan with a tight fitting lid
Instructions
- Pour half the Olive Oil in the base of the pan
- Place the pasta shapes in one quarter of the pan
- Place the chicken breasts in one quarter of the pan
- Place the chopped red onion in one quarter of the pan
- Lastly, spoon in the crushed tomatoes into the open quarter
- Sprinkle with the chopped basil
- Pour the remaining Olive Oil and chicken stock over top to cover all the ingredients
- Cover with the tight fitting lid
- Bring to a boil. When bubbling, turn down to the lowest heat and leave on a low simmer for 30 minutes
