Ingredients
- 6 tablespoons extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 cup cooked quinoa
- 1/2 cup dried apricots, chopped
- 1/2 cup walnuts, chopped
- 2 teaspoons ground turmeric
- Sea salt and black pepper to taste
Instructions

- Roughly chop the apricots and walnuts
- In a large mixing bowl, add the apricot, walnuts, and turmeric, stir
- Add the cooked quinoa
- In a separate bowl, whisk together the Olive Oil and apple cider vinegar. Season to taste
- Pour the salad dressing over the quinoa mixture and toss together
